Maple Carob Swiss Oats

Good morning! How did everyone sleep last night? It was raining cats and dogs all through the night so I was constantly getting woken up by the thunder. But I still managed to get a good night’s sleep though.

For breakfast, I decided to put a twist on a standby of mine – I decided to make Maple Carob Swiss oats. Last night, I combined 1/2 cup of rolled oats, and 1/2 cup of vanilla soymilk that I put a tbsp of carob powder in and mixed it in well. To this carob milk mixture, I added one tbsp of maple syrup. I poured it in with the oats, covered it, and set it in the fridge. Today I grabbed my mixture and swirled in some mashed banana and flaxmeal. On top I garnished with banana slices and unsweetened cocount. I drizzled in a bit more maple syrup today. MMM… carob heaven!! So good! What a great way to start a busy day!
