Pumpkin Pie Oats!

Good morning all!

It is Tuesday, which means I actually have classes today, but I’m not too down, because I technically only have one more full week of classes left! Yay! Today I have to take the ATI Exam so I had to fuel my brain for this upcoming test.

I decided to add a new twist to my regular oatmeal… I added some pumpkin to my oats. But, silly me, I didn’t realize that I had gotten pumpkin pie mix instead of just regular canned pumpkin. But that’s ok, because now I don’t have to add any sweetner (the pumpkin is sweetened with evaporated cane juice) and it includes pumpkin pie spice, so I’m all for that! 🙂

To my packet of regular flavored Quaker Instant Oats I added about 1/2 cup of organic pumpkin pie mix, 2 tbsp dried cranberries, 1 tbsp flaxmeal, and 1 tbsp slivered almonds. On the side I had the last of my delicious and ripe strawberries (about 3/4-1 cup).

This meal was delicious and a great change from my regular oatmeal. Have a great Tuesday everyone! I’m off to take this exam.. wish me luck! 🙂
