WCMN Obsessed
So, I think I have this new obsession going on… I’m lovin’ anything white chocolate macadamia nut right now! Today, I had some white chocolate macadamia nut oatmeal (so good) for breakfast and both of my snacks were white chocolate macadamia nut flavored.

AM Snack

SO FREAKIN’ GOOD! I totally agree with Brooke in that this bar totally reminded me of a Rice Krispie treat, except 100x better! Mmm, my fave Luna flavor ever

Omg, this was like eating heaven. Seriously.. when I took a bite, I was like “Is this an energy bar or is this dessert??” You MUST try it now!
Dessert
My ravenous sweet tooth started kickin in a few hours after dinner, and the only thing I had in my dorm room was this..

While I thought the Cherry Cashew was a bit to sweet for me, the Chocolate Brownie bar blew me away. It really did taste like a brownie… yum-yum! I savored every bite and paced myself while appreciating the chocolate goodness. Mmm! While this wasn’t exactly sweet (that’s ok, I don’t really like sweet chocolate), it was pure cocoa yumminess. I highly recommend this to chocolate (and non-chocolate!) lovers alike. Thanks for recommending these bars Shelby!
I know it seems like I eat only bars, but I promise you guys, I do eat real food, too. It’s just that these past few days I’ve been eating in the dining hall with friends, and I still feel a bit awkward photographing my meals in front of my friends. Someday I’ll muster up the courage to do so, though.

Almond Butter Giveaway
It’s Monday and boy am I glad it’s almost over.
Mondays are my longest day so I am pretty much drained right now, yet I still have to study for my Aging exam tomorrow as well as an OB quiz! So, let’s make this quick:
Midmorning Snack

Cookie!! You know my love affair with cookies, so I just had to snatch this flavor up when I saw it at WF. When I opened the package I was delighted to find two mini clif z bars inside the package. This was tasty, but honestly, it was exactly like the Peanut Butter Clif Z bar.
Afternoon Snack

I finally found them at tj’s Shelby! After seeing these bars on her blog, I was excited to finally give these a try. Sadly, though, I did not enjoy them as much as I thought I would have. I think I found it to be a little too sweet for me (and I have a raging sweet tooth) and I guess I just prefer Larabars instead. But hey, don’t let me stop you from trying the bar. It’s chock full of good nutrients and it is tasty.

White Chocolate Chip Macadamia Nut Oatmeal

WOW! What a delicious bowl of oats, guys!! Seriously, you MUST try this! I took 1/2 dry oats, cooked it in vanilla hempmilk (fave nondairy milk), added a tbsp of unsweetened coconut, a tbsp of flax, drizzled in some agave, topped it with a dollop of oh-so-good macadamia butter and vegan white chocolate chips. Can you say ‘holy yum’?? Healthy decadence, for sure!
New Find
Hazelnut Butter

Although I am mad about the PB recall deal, it had given me an opportunity to broaden my nut butter horizons. I already tried raw cashew butter and macadamia butter, and both were quite tasty, it was only a matter of time when I would try the VeggieGirl approved Futters Nut Butters. My WF started to stock up on these nut butters and there were so many to choose from (pistachio, almond, strawberry almond, walnut.. the list goes on!), yet it was not hard to decide which one I would want to try first. I knew that VeggieGirl speaks quite highly of Hazelnut Butter, so I decided to give it a go. Thoughts? While I did not like it as much as I enjoy cashew or macadamia, it is a welcome change from the norm. I would recommend this to people who really enjoy the unique flavor of hazelnuts.
Not only did I enjoy my new nut butter straight up and on bread, I also was able to bake up a special treat for someone and let me tell you, they smelled fantastic! I hope the person I baked them for enjoys them!

Exciting News…
I was one of the lucky bloggers who got to receive a VitaMix Super 5200! Thanks to Alison and Vita-Mix for this wonderful opportunity! I can not express how much this means to me, as I’ve always wanted this powerful blender, and now I own one!
Unfortunately, I am not able to keep the blender here in my dorm, but I sometimes go back home on weekends, and when I’m there I get to use my amazing machine. One thing I love to whip up with my Vita-Mix is a refreshing green smoothie.

Using the “standard” recipe of a cup of liquid (I used vanilla soymilk), a banana, and a cup of spinach, I was able to whip up a delicious and nutritious drink. Wow! It’s so amazing how this thing blends… Look at how pretty the smoothie is. No green chunks whatsoever… just pure blended goodness!
I can’t wait to use it for many other recipes I’ve been dying to try. If you are able to purchase one of these babies, I HIGHLY recommend it. It is so worth the investment. And if you can’t, I highly advise you save up for it.. it is worth every penny!
Well, this update took longer than I expected it to! I’ve got some studying to finish up on. Hope everyone else had a good weekend. It’s back to the grind..

Sleepy Friday
I don’t know what it was, but I was super drowsy all day long… and I did have a good night’s sleep, so I have no clue why I was so tired today!
It’s barely 7 and my eyes are drooping! Before I fall asleep on my laptop, here’s my meal of the day.
Afternoon Snack

Yes, a cookie! You all know what a cookie monster I am. So much so, I’ve been known to eat them for breakfast sometimes! So I couldn’t help but snatch this little guy up when I spotted it at my local Whole Foods and had it for today’s afternoon snack. This MacroTreat flavor was Carob Fudge and I give it 3.5 stars out of 5. I LOVE carob but I didn’t really get that much of its taste in this cookie. It was good, but I was expecting more carob goodness. If you want a really awesome carob cookie, check out Eat, Drink & Be Vegan’s Double Carob Cashew Cookies. They are phenomenal!
I’m off to maybe finish my homework.. that’s if I don’t fall asleep doing it! Enjoy your Friday… hooray for the weekend!

Today is my half birthday.. haha, I’m officially 20 1/2 years old!
Lunch

Grilled Cheeze Sandwich (made with Galaxy Vegan slices.. not as good as the Rice one!), Tomato Soup (brilliant Katie idea – I poured a can of Muir Glen Tomato Sauce seasoned it up with s+p, nooch, garlic and onion powder. It was DELISH!), and an apple on the side. The bread I used was from Trader Joe’s – Sprouted Rye Bread. It does contain honey, but I don’t mind it and I found it to be quite tasty! Yes, I know I burnt my bread, but I like it that way. I enjoyed my typical “american” lunch.

Weekend @ Home
This past weekend I was able to go home since the Midwest was hit with BRUTAL weather (-30s people!!) and I figured since I would be cooped up inside my dorm anyway, I just as well could do that at home.
Then we got hit with a snowstorm…

And then we had some neighbors stop by…

During this frigid weather, all I wanted was some good ol’ comfort food. For me, there’s nothing more comfortable than a plate of protein and starches, such as my Mommy’s well fried beans, some potatoes w/ veggies, and a slice of vegan cheese (Galaxy Rice American flavor .. really good!). I also threw in some Sunsweet Ones.. these are so good, they really are nature’s candy.

My mom made some yummy lentil soup and I decided to bake up a cornbread using the recipe in Vegan Lunch Box.

Unfortunately, this cornbread came out too dry and crumbly. So crumbly, in fact, it was difficult to cut a slice! I HATE dry cornbread. I love my cornbread to be sweet and MOIST, and I keep trying recipe after recipe to find that perfectly moist and sweet cornbread, but I keep failing. I don’t blame the recipe for this failure, I blame me for using cornflour instead of cornmeal (it was all I had on hand). Does anyone have a great sweet vegan cornbread recipe?
In an effort to try and post more frequently, I’m gonna take an idea from Miss Katie and do a “Vegan Nurse Meal of the Day” post as often as I can. What better way to start this new feature than with the first meal of the day – breakfast!
Breakfast
Today for breakfast I had one of these babies I found at Trader Joe’s…

A vegan carrot ginger oat bran muffin! While the package does not explicitly state that it’s vegan, the ingredient list is free of any dairy, eggs, or any other animal derived ingredient! Plus, it is so wholesome and short (no sugar! it’s fruit juice-sweetened) I couldn’t help but snatch these babies up. I love carrot anything – juice, cupcake, cake, raw.. and now I can add this muffin to my list. This was such a yummy and healthy muffin.. it was not too sweet and the ginger was perfect in it (not overpowering at all, but subtle and delicate). I can’t wait to try TJ’s other bran muffins.. yay for them carrying vegan baked goods!

Who else is bummed about the Larabar Peanut Butter Cookie recall?? I JUST bought a ton of em and a Jamfrakas Peanut Butter Crisp bar, and now you’re telling me I have to.. throw them away?! Boo! Now what will I do with them.. and when will I be able to eat these babies again?

Overdue Post
Hey guys!
I am currently back at school, since last Monday actually, so it’s the start of a new semester. While I do think break went by too fast, I am happy to get started with the new school year. More on that later cause right now I owe you some food pics!
On my last day before going back to school, my sisters treated me by going out to the Chicago Diner. Here’s what my sister’s had:

French Toast Combo
Of course, the food was smashin’ and we all cleaned up our plates. We were so full we couldn’t even fathom the idea of dessert, so we didn’t get any. The French Toast was so good, it tasted just like funnel cake! Another yummy meal from the Chicago Diner. Ah, how I love this place!
When I arrived back to campus, our university had opened up our brand new student union. In this new union, I can actually find some pretty good (and healthy!) vegan meals and let me tell you, it is so nice to know that sometimes when time is short, I can just go pick something up from the union instead of hastily trying to make my meal and scarf it down before my next class.
During one of these times, this little fella caught my eye…

Veggie California Sushi Rolls
I’ve never had sushi before so I was excited to finally get to try this ethnic treat and boy, was I glad I did. I am officially a sushi lover now. Gosh, is this what I’ve been missing all this time? No wonder these little rolls have so many fans. The taste is interesting, where it can be slightly sweet and have an “ocean” taste to them. I really enjoyed them and I’m glad my school sells them though I do wish they could get some that have brown rice.
My school is also stocking up on a favorite of mine…

Chocolate Coconut Chew

Cherry Pie
I have said it before and I’ll say it again – I’m NOT a chocolate fan, but for some reason, I’m loving cocoa powder! Because I love the Jocalats and I really loved the Chocolate Coconut Chew bar. It was really good with just a perfect hint of coconut. I can’t say the same thing about the Cherry Pie flavor though. I have tried this flavor before and wasn’t a big fan of it the first time, but I thought I would give it a second chance, and I still wasn’t really into the tartness. Oh well, I’ve got many other fab flavors to choose from.
Oh! I almost forgot about this AMAZING raw ice cream I got before leaving for school.

Karyn's Vanilla Dream Cream
On our way back home from the Chicago Diner my sister saw that we found Karyn’s other restaurant. Simply called Karyn’s, it is her raw vegan gourmet restaurant that also has a small cafe/store attached to it. We decided it’d be cool to check it out, since we were in the area. Lately, I’ve been really intrigued by the raw food movement, and it’s something I would totally love to do. While browsing through the store, there were so many things I wanted to buy, but one thing that caught my eye was this raw ice cream. This ice cream was so good, guys! It was creamy and the vanilla flavor was spot-on with a subtle taste of coconut. Really good!
That’s all the food pics I have for you for now. I really would love to get back to posting my daily eats, so I will try to make an effort, but we’ll see how my schedule goes. Speaking of schedules, this semester I am taking ALL nursing courses, which is new for me, since I’ve always had to do an elective. Though I am thrilled to be focusing on solely nursing, I am sort of going to miss taking other classes. This semester I am taking:
- Nursing Care of the Adult II (aka Med Surg)
- Gerontological Nursing
- Service Learning Project in Health Care in Central America (I’m going on a medical missions trip during Spring Break to Costa Rica and Nicaragua! Exciting!)
- Nursing Care of the Childbearing Family (aka OB Nursing! The field I want to go into!)
Oh, goodness, that took longer than expected! Got to go guys, but like I said, I will try my best to post more daily eats! You all have a good night.

Hi fellow bloggies!
Currently, I am still experiencing technical difficulties with Internet at home BUT I’m at the library so I can update my blog for you wonderful readers!
I really miss having Internet, mostly because of you guys.. you always put a smile on my face with each and every one of your comments. THANK YOU guys! I really do appreciate you!
So, in hopes that you haven’t given up on me, I came to the library to show you some of the eats I’ve been having these past few days. They are pretty random food pics, but hopefully they will entice you.
Breakfast
HempPlus Waffles dusted with powdered sugar with fresh fruit and a dollop of Soyatoo along with Wildwood Vanilla Soyogurt and Barney Butter. Mmm!

Snacks
Katie’s Dark Chocolate Walnut Bar
This was actually pretty good. Not as good as the Jocalats, imho, but pretty tasty nonetheless. Thanks for the bar Katie!
And thanks to Katie for also turning me onto the Jocalat line.. I decided to try two other flavors!


I had really high hopes for the Chocolate Orange flavor (I mean, doesn’t that just sound AMAZING?), but it didn’t really live up to my hopes. I think I found the orange flavor a bit too overpowering and distracted me from the pure cocoa flavor I’ve come to love. But hey, don’t let my review of this bar get you down, Brooke raved about it, so don’t let me stop you from trying this bar.
As for the Chocolate Hazelnut bar, oh my gosh. Holy yum! This was very tasty and just oh so decadent, it’s hard to believe these bars are actually good for you. Definitely give this one a try.. so good! I’d say both the Chocolate Coffee and Chocolate Hazelnut share the top spot on my list. Yum!
My mom’s traditional “fruit punch” (ponche). It’s traditional that my mom make this for us on New Year’s Eve. It’s chock full of tropical fruits galore. The drink is usually more liquid than fruit, but I’m all about the fruit and sucking on the sugar canes. Mmm… delicioso!
Karyn’s
My sister loved Karyn’s so much, we went back two times! I forgot to bring my camera on one trip, sorry! BUT I got to take pics of our New Year’s Eve dinner there.
We ordered two appetizers – the Combo Fried Basket (mushrooms, tofu, and zucchini)

I had two of each (this is my first serving).

Then we had some Vegan Pizza!
This is just one of my the three slices I had… yum-yum!

Oh, yeah! And I also helped my sister eat some of her delicious Shitake Mushroom Soup (special of the day) and the delicious cornbread.

Just for Halie
A reader by the name of Halie recently commented on how much she loved when my mom made me vegan pupusas. Well, ever since she commented, I had a craving for them, and so I called up my mom’s best friend (who is from El Salvador) and she invited the fam over for pupusas yesterday. And she was so nice as to fulfill my request for vegan pupusa (basically, refried red beans stuffed inside masa and grilled to perfection). This was yummy in my tummy! Thanks Halie for the reminder and here is a pic just for you (and the rest of my readers too, haha).

Oatmeal Raisin is my fave type of cookie, and this one is my favorite oatmeal cookie yet! Yea, I know there are no raisins in it, but I didn’t even miss them! The cookie was just so tasty on its own, it needn’t the help of plump raisins at all.

Oh, and by the way, yes, Karyn’s cookies are that large! No exaggeration!

And It’s Over
I can not believe Christmas is over.. it came far too quickly and now it’s over. My, how time flies!
I am sorry to say that I did not take any photographs of my food on Christmas.. I just wanted to savor the day and festivities, so I did not even bother to bring my camera over to our friends’ house, which is where we spent our Christmas. We also went to the movies and saw The Spirit, which was alright, but not as great as I thought it was going to be.
I did manage to photograph my eats for today, though, so on with the recap!
Breakfast
ZenSoy Banana Pudding topped with a serving of Sunflower Agave Plus granola and an orange

The banana pudding was really good – I was pleasantly surprised! I never really liked regular pudding, so I was not really expecting to like this, but it was really good. Definitely give these puddings a try. The granola was out of this world crazy good. I LOVE Nature’s Path granolas, they are by far the best out there, hands down! I personally liked that this box was clearly labeled “VEGAN” and not simply “vegetarian”. I highly recommend purchasing this granola. Really tasty!
Lunch
Katie’s Larabar Jocalat Chocolate Coffee bar and a Chill Strawberry Bubble Tea


My mom and I decided to head on over to Woodfield Mall to check out the sales. Boy, was it PACKED! It took us 30 minutes just to find a parking space! While shopping, I ate the Larabar, which I really enjoyed. I’m not a fan of chocolate nor of coffee, but I’m really likin’ the Jocalat line! Thanks Katie for turning me onto them… I never would’ve given them a chance if it weren’t for you! I also found a place in the mall that sold bubble tea and I immediately ordered myself one. I hadn’t had one of these in years, so it was a great treat. I especially love the tapioca pearls – so chewy!
Dinner
Dinner was leftovers galore! I ate both of my sisters’ leftovers from Karyn’s the other day, as well as a dollop of Sabra hummus (mmm!!) and some baked tortilla chips.

Dessert
Cookie!
My name is Evey and I am addicted to cookies.

I told ya I restocked my cookie stash! Tonight’s dessert was from Karyn’s – I had her Sweet Potato Cookie. Holy yum! Although this had more of a bread texture than a cookie texture, I thoroughly enjoyed every single bite. The sweet potato was definitely noticeable, as were hints of lemon and chunks of sweet pecan pieces. This was an amazing cookie and I can’t wait to try the other flavors I got.
