Getting There
Hey guys,
I really appreciate every single one of your guys’ wishes.. they totally made my day and I’m truly happy to have an awesome set of blog readers.. you guys are amazing!
Thankfully, I’m feeling much better today and my appetite is totally back! I was also able to do some shopping and I finally settled on a laptop to get for school, along with some other miscellaneous things I “need”. I’m getting there… I’m almost in the mindset for school, hehe.
For lunch today, I decided to have one of my mom’s vegan sweet corn tamales (she’s so awesome, she made the recipe using Earth Balance Buttery Spread and Earth Balance Vegetable shortening). Mmm.. these were so good! The natural sweetness of fresh corn just burst in every bite.. yum! I had my tamale alongside a Banana Date Wheat Germ smoothie. A unique lunch indeed!
While out shopping, I ate my packed snack of peanut butter filled pretzels and a sweet pluot. I am in love with these pretzels. They’re so good!
Dinner tonight was another Mexican delight: a yummy veggie burrito. This time, it was filled with homemade refried beans, Spanish rice, spinach, avocado, and textured vegetable protein that was seasoned with salt, pepper, onions, and cilantro, all wrapped in an Ezekiel tortilla. I served myself a little bit of leftover slaw my mom made. Very yummy and very filling!
I went with a light and simple dessert: fresh watermelon. There’s nothing better in these summer nights than a nice slice of watermelon. Yum!
I’m calling it a night.. you all have a good one!
